Here’s why we use a foil shield when roasting turkey in the oven. Covering the breast with a double layer of aluminum foil during the hotter first stage of roasting protects the lean meat from overcooking and the skin from burning (we need that higher temperature to cook the turkey’s legs and thighs). Once the oven temperature is reduced midway through roasting, the foil comes off so that the skin can brown and crisp. Learn more with our fan-favorite Easier Roast Turkey and Gravy recipe: https:/
