Check the seasoning by cooking off a taster. Roll inbetween baking parchment and bake at 180c for about 40 minutes until the center is 74c. Blitz up the pistachios and mix with chopped parsley. Here's the recipe I use for the pork, chestnut & sage stuffing log: - 1tbsp butter - 1 onion - 15 fresh sage, chopped - 180g pack chestnuts - 100g chopped roasted hazelnuts - 100g breadcrumbs - 1/2 tsp mace - 1 egg - 1 pack streaky bacon - 400g sausage meat I freeze this then defrost fully in the fridge the day before cooking. 180° fan for 1 hour, unwrap the foil halfway through cooking to crisp up the bacon. #stuffingrecipe #christmasdinner #christmasfood #christmascooking | Tahnee Batch Cookin
