Collard season is almost upon us. I have always been taught to wait until after the hard frost to eat collards. The frost takes away the bitterness. This is how I cook mine. I cook them down in meat grease and enough water to cover the bottom of a skillet. Put a lid on it. Add more water as I need to. When the collards are tender, then I let the water cook out. I fry the collards in the oil for a few minutes. I season them with salt, pepper, and meat grease. #LumbeePride #lumbeecooking #collards
